1) 4 pieces of fresh Alaskan Salmon (1/2 lb each)
2) Juice of 1 lemon
3) 1/2 tsp powdered dry lemon
4) 1/2 tsp Turmeric
5) ½ tsp of Persian all spice (optional)
6) 2 tbsp of saffron water(1 tsp ground saffron, dissolved in 2 tbsp hot water)
7) 3 Tbsp olive oil
Marinate recipe: Combine all the above ingredients, whisk for 10 seconds. Add Salmon to the mixture and store in a plastic bag and marinate in the fridge for at least 30 minutes. (for best results marinate overnight)
Herb sauce to be placed on top of cooked salmon
Ingredients:
1) One large yellow chopped onion
2) 3 Tbsp of olive oil
3) 1 cup chopped fresh dill
4) 1 Tbsp of saffron water (see above)
5) 1 cup fresh chopped cilantro
6) A dash of salt, pepper, coriander and cumin
Method:
1) Sweat (Sauté on low heat) onions in olive oil until golden.
2) Add all the fresh herbs and spices and sauté for about 5 minutes. If necessary add additional olive oil to keep the herbs moist.
3) Add a dash of salt/turmeric and saffron water. Do not overcook the herbs, they will become bitter
4) Set aside for serving
Sautéing and serving the Salmon
1) Heat olive oil in a large skillet
2) Drop a piece of onion in the skillet and if it sizzles it is ready for the salmon
3) Place salmon carefully in the skillet. Cook about 4 minutes or until browned. Turn over the salmon using a large spatula. Cook for an additional 4 minutes on medium-high heat.
4) Lower the heat, place the lid on the skillet and cook for an addition 5 minutes on low heat.
5) Proceed to scoop 2 table spoons of sauce on the top of the cooked salmon, garnish with herbs
6) Serve and enjoy!
